The production of matcha tea is very demanding, and only a few Japanese farmers know the procedure. A plant called tea tree is completely shaded 4 weeks before harvest, which ensures overproduction of chlorophyll in the plant. It gets a deep green colour and the resulting beverage has a characteristic sweetish delicate taste. The leaves are picked exclusively by hand and processed in a factory called Aracha.
At the factory, the leaves are scalded and then dried. Dried leaves are carefully sorted, and low-quality leaves are removed. The tea is also free of other impurities such as stems or twigs. After sorting, the leaves are cut and ground in granite mills. For the resulting mixture, different varieties are mixed to achieve the highest quality.
