Description
Tarragon, or by its full name tarragon wormwood, is an indispensable herb of French cuisine. Do not have to be afraid of his generic name. Unlike wormwood, it is bitter only slightly and excels in its warm sweet taste and smell of anise. In some herbariums, you can find it under the name dragon's stem, because its shape that resembles just like the dragon's tail.
It is most often used for roasting or grilling poultry or fish meat. It adds its unique flavour to vegetable and egg dishes. Also, you won´t make a mistake with a hint of tarragon to sauce or soup. When cooking with tarragon, beware of its quantity and dispense it in a pinch. It has a distinctive taste and aroma which gets slowly released.
