Description
Umeboshi plums - as they are often called in the Czech Republic - are stony berries of the ume trees. However, this fruit tree is actually an apricot species. No artificial dyes are used in the production process, and the Umeboshi plums are coloured only by the Shiso leaves, which give it a red colour.
Umeboshi plums are harvested in spring. They are salted immediately after having been harvested and are left to dry for several days in the sun. As soon as the Umeboshi plums are almost dried, they are pickled in salty brine, burdened with stones and left to ferment. Red liquid that is produced during the fermentation process from the Umeboshi plums is called ume-su, "umeocet" in Czech. (although in fact this product has nothing in common with vinegar).
