Kombucha is a name of a fungus originating in East Asia. This is not a common fungus as we know it, but it is a symbiotic formation made up of several types of yeasts and bacteria. It has a shape of a flat rubbery light-grey or brown pancake. In Japan, Kombucha was known already in 400 AD. In ancient China, the tea fungus was worshipped as a divine gift. Throughout the centuries, the natural refreshing Kombucha beverage has travelled over Japan and Russia to Europe.
